Serve it warm with tortilla chips or veggie sticks for the ultimate easy appetizer. This easy recipe is also great for dinner ideas, quick party food, or cozy snack nights!
Ingredients
1 pound ground beef
1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
1 pound Velveeta cheese, cubed
0.25 cup milk (optional, for thinner dip)
Optional toppings: chopped cilantro, diced tomatoes, jalapeños, green onions
Tortilla chips or dippers of choice
Instructions
1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain any excess fat.
2. Add the cooked beef to a crockpot. Stir in the Velveeta cheese (cubed) and Rotel tomatoes (do not drain).
3. Cover and cook on low for about 2 hours, stirring occasionally, until the cheese is completely melted and smooth.
4. If the dip is too thick, stir in the milk gradually until the desired consistency is reached.
5. Garnish with chopped cilantro, tomatoes, jalapeños, or green onions if desired.
6. Serve warm with tortilla chips or other dippers.
Notes
For extra spice, substitute ground sausage or hot Rotel instead of the regular variety.
To keep the dip warm while serving, use the crockpot’s “warm” setting or a small fondue pot.
Make ahead and refrigerate overnight for easy party prep—just reheat in the crockpot before serving.
