Description

This bright and festive salad features baby spinach, dried cranberries, almonds, and crumbled feta tossed in a sweet and tangy vinaigrette. It’s the perfect refreshing side to balance any holiday meal and brings color, crunch, and flavor to your table.


Ingredients

6 cups fresh baby spinach

1/2 cup dried cranberries

1/3 cup whole almonds (raw or toasted)

1/3 cup crumbled feta cheese

1/4 cup olive oil

2 tablespoons apple cider vinegar

1 teaspoon honey

1 teaspoon Dijon mustard

pinch of salt and pepper


Instructions

1. In a small bowl or jar, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until fully combined. Set aside.

2. Wash and thoroughly dry the baby spinach, then place it in a large salad bowl.

3. Add the dried cranberries and whole almonds over the spinach. Toast almonds if preferred.

4. Sprinkle crumbled feta cheese evenly across the top.

5. Just before serving, drizzle the vinaigrette over the salad and toss gently to combine.

Notes

Toasting the almonds enhances their nutty flavor and adds extra crunch.

Wait to dress the salad until serving time to keep the spinach fresh and crisp.
