Ingredients

2 large orange sweet potatoes, peeled and diced

1 tablespoon olive oil

½ teaspoon salt

½ teaspoon smoked paprika

1 pound ground turkey (93% lean)

1 tablespoon olive oil

½ cup diced onion

2 garlic cloves, minced

1 teaspoon ground cumin

1 teaspoon chili powder

½ teaspoon oregano

salt and pepper to taste

fresh guacamole or sliced avocado

fresh tomato salsa or pico de gallo

Greek yogurt or sour cream

chopped fresh cilantro

diced red onion

lime wedges


Instructions

1. Preheat oven to 425°F (220°C). Toss diced sweet potatoes with olive oil, salt, and smoked paprika. Spread on a parchment-lined baking sheet and roast for 25–30 minutes, flipping halfway, until golden and tender.

2. In a large skillet, heat olive oil over medium. Add diced onion and sauté for 3–4 minutes until soft. Add minced garlic and cook 30 seconds more.

3. Add ground turkey to the skillet and cook, breaking it up, until browned and cooked through (about 6–8 minutes). Add cumin, chili powder, oregano, salt, and pepper. Stir and cook for 2–3 more minutes.

4. Divide roasted sweet potatoes among bowls. Top with cooked turkey and your favorite toppings: guacamole, salsa, yogurt, cilantro, red onion, and a squeeze of lime juice.

Notes

Roast extra sweet potatoes for later in the week—they’re perfect in salads or wraps.

You can swap ground turkey for ground chicken or beef if preferred.
