Ingredients
12 oz breakfast sausage
8 large eggs
2 cups whole milk
5 cups bread cubes (day-old or lightly toasted)
2 cups shredded cheddar cheese
1 teaspoon salt
½ teaspoon black pepper
1 cup diced vegetables (optional – bell peppers, onions, or spinach)
Instructions
1. Brown the sausage in a skillet over medium heat, breaking it into crumbles. Drain excess grease and set aside.
2. Grease a 9×13-inch baking dish and layer the bread cubes evenly across the bottom.
3. Sprinkle the cooked sausage over the bread layer, followed by shredded cheese.
4. In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in diced vegetables if using.
5. Pour the egg mixture evenly over the casserole and gently press down with a spatula to soak.
6. Cover with foil and refrigerate for at least 1 hour, or overnight for best results.
7. Preheat oven to 350°F (175°C).
8. Bake uncovered for 40–45 minutes, or until golden brown and set in the center.
