Description

This Delicious Sweet Hawaiian Crockpot Chicken is tender, juicy, and drenched in a sweet and savory pineapple glaze. A set-it-and-forget-it meal perfect for busy weeknights or casual gatherings. Serve it over rice or in buns and enjoy a taste of the tropics with every bite.


Ingredients

2 lbs boneless skinless chicken thighs

1 cup pineapple juice

½ cup brown sugar

½ cup soy sauce

2 cloves garlic, minced

1 tablespoon cornstarch

2 tablespoons cold water

¼ cup chopped green onions (for garnish)


Instructions

1. Trim excess fat from the chicken thighs and pat them dry.

2. In a bowl, whisk together pineapple juice, brown sugar, soy sauce, and minced garlic.

3. Place chicken thighs in the crockpot and pour the sauce over them. Coat evenly.

4. Cover and cook on LOW for 5–6 hours or on HIGH for 3–4 hours.

5. Once cooked, remove chicken and set aside.

6. In a small bowl, mix cornstarch with cold water to create a slurry.

7. Stir the slurry into the crockpot sauce. Cook on HIGH for 10–15 minutes until thickened.

8. Return chicken to the sauce or spoon the sauce over chicken before serving.

9. Garnish with chopped green onions and serve hot.

Notes

For a leaner option, substitute chicken thighs with boneless skinless chicken breasts but avoid overcooking.

Add vegetables like bell peppers or carrots during the last hour for extra texture.

Sauce may thicken more after refrigeration; loosen it with a splash of water or pineapple juice when reheating.
