Ingredients

1 medium head of cauliflower (or 4 cups riced cauliflower)

2 large eggs

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon garlic powder


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Pulse the cauliflower in a food processor until it resembles rice. Microwave for 5-8 minutes until soft.
  3. Let it cool slightly, then wrap in a clean towel and squeeze out as much moisture as possible.
  4. In a large bowl, combine the cauliflower, eggs, mozzarella, Parmesan, Italian seasoning, salt, and garlic powder.
  5. Mix until a sticky dough forms. Press the dough onto the baking sheet, forming a 1/4 to 1/3 inch thick crust.
  6. Bake for 20-25 minutes, or until golden and crisp.
  7. Add your favorite toppings and bake for another 10 minutes, until the cheese is melted and bubbly.
