Ingredients
1 medium head of cauliflower (or 4 cups riced cauliflower)
2 large eggs
1 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon garlic powder
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Pulse the cauliflower in a food processor until it resembles rice. Microwave for 5-8 minutes until soft.
- Let it cool slightly, then wrap in a clean towel and squeeze out as much moisture as possible.
- In a large bowl, combine the cauliflower, eggs, mozzarella, Parmesan, Italian seasoning, salt, and garlic powder.
- Mix until a sticky dough forms. Press the dough onto the baking sheet, forming a 1/4 to 1/3 inch thick crust.
- Bake for 20-25 minutes, or until golden and crisp.
