Ingredients
1 pound ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup frozen corn
1 can (10.5 ounces) cream of mushroom soup
1/2 cup sour cream
2 cups shredded cheddar cheese, divided
3 cups frozen diced potatoes or hash browns
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika or chili powder (optional)
Instructions
1. In a large skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
2. Add diced onions and garlic to the beef; sauté for 3–4 minutes until the onions are soft.
3. In a large bowl, combine the beef mixture with corn, soup, sour cream, 1 cup cheddar, salt, pepper, and paprika or chili powder. Stir to combine.
4. Grease a 9×13-inch baking dish. Spread half the frozen potatoes in the bottom, layer with the beef mixture, then top with remaining potatoes.
5. Sprinkle the remaining cheddar over the top.
6. Cover with foil and bake at 375°F for 30 minutes.
7. Uncover and bake another 10–15 minutes until the cheese is melted and bubbling.
8. Let rest for 5–10 minutes before serving.
Notes
Letting the casserole sit before slicing helps it hold together cleanly.
If using fresh potatoes, parboil them before layering.
