Ingredients
2 large chicken breasts, cubed
12 oz bowtie pasta
2 tablespoons butter
3 garlic cloves, minced
1 ½ cups milk
8 oz Velveeta cheese, cubed
1 cup shredded mozzarella cheese
½ teaspoon salt (adjust to taste)
¼ teaspoon black pepper
2 tablespoons chopped fresh parsley (optional, for garnish)
Instructions
1. Season the cubed chicken with salt and pepper. In a large skillet over medium heat, cook until golden brown and fully cooked. Set aside.
2. In a large pot of salted boiling water, cook bowtie pasta until al dente. Drain and set aside.
3. In the same skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds until fragrant.
4. Reduce heat to medium-low. Stir in milk, then slowly add the Velveeta cubes. Stir until fully melted and smooth.
5. Add shredded mozzarella and stir until the sauce becomes creamy and stretchy.
6. Add cooked pasta and chicken to the sauce. Fold everything together until well coated. Taste and adjust salt and pepper.
7. Serve hot, topped with chopped parsley if desired.
Notes
For a lighter sauce, you can substitute whole milk with low-fat milk or unsweetened almond milk.
Use pre-cooked rotisserie chicken to cut down on prep time even more.
