Ingredients
4 large egg whites
1 cup granulated sugar
2 tablespoons Jello powder (any flavor)
1⁄4 teaspoon cream of tartar
1 pinch salt
Optional: a few drops of food coloring
Instructions
1. Preheat oven to 200°F (93°C) and line two baking sheets with parchment paper.
2. In a grease-free mixing bowl, beat egg whites with salt and cream of tartar on medium-high speed until soft peaks form.
3. Gradually add sugar, one tablespoon at a time, and continue beating until stiff, glossy peaks form.
4. Gently fold in the Jello powder. Divide into portions if using more than one flavor.
5. Add food coloring if desired, swirling gently for a watercolor effect.
6. Transfer the meringue to a piping bag fitted with a star tip and pipe small swirls onto baking sheets.
7. Bake for 1 hour and 15 minutes. Turn off the oven and let cookies cool inside for 1 hour with the door slightly ajar.
8. Once cooled, serve or store in an airtight container at room temperature for up to 5 days.
Notes
Make sure your mixing bowl and beaters are completely grease-free for best meringue volume.
Use room temperature egg whites for quicker and higher peaks.
Avoid humid weather when making meringues—moisture can ruin their crisp texture.
