Ingredients
2 boneless skinless chicken breasts
8 oz penne pasta
1 tablespoon olive oil
1 tablespoon butter
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
2 cups fresh spinach
1 cup heavy cream
½ cup grated parmesan cheese
1 teaspoon Italian seasoning
¼ teaspoon crushed red pepper flakes (optional)
Salt and pepper to taste
Instructions
1. Boil salted water and cook penne pasta until al dente. Drain and set aside.
2. Slice chicken breasts into bite-sized pieces. Season with salt, pepper, and Italian seasoning.
3. Heat olive oil and butter in a large skillet over medium-high heat. Add chicken and sear until golden and fully cooked. Remove from pan and set aside.
4. In the same pan, sauté minced garlic for 30 seconds. Add sun-dried tomatoes and cook for another minute.
5. Pour in heavy cream and bring to a light simmer. Stir in parmesan until melted and creamy.
6. Return cooked chicken to the pan. Add spinach and stir until wilted.
7. Toss in cooked pasta and mix well. Adjust seasoning and add red pepper flakes if desired.
8. Serve hot, garnished with fresh basil or extra cheese if preferred.
Notes
Use freshly grated parmesan for the smoothest melt and boldest flavor.
Add a splash of milk or cream when reheating leftovers to keep the sauce creamy.
For extra flavor, deglaze the pan with a splash of white wine before adding cream.
