Ingredients
1 pound boneless skinless chicken breasts or chicken thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 tablespoon olive oil
2 tablespoons butter
1 small yellow onion, finely diced
3 cloves garlic, minced
1 cup arborio rice
1/3 cup chopped sun-dried tomatoes
1/2 teaspoon red pepper flakes
4 cups chicken broth, warmed
1/2 cup heavy cream
3/4 cup grated parmesan cheese
2 cups fresh spinach, roughly chopped
1 tablespoon cream cheese
Extra parmesan cheese for serving
Fresh basil or parsley for serving
Instructions
1. Pat the chicken dry and season it with salt, black pepper, and Italian seasoning.
2. Heat the olive oil in a large deep skillet over medium heat and cook the chicken until golden and fully cooked, about 4 to 6 minutes per side. Remove and rest.
3. In the same pan, melt the butter and cook the onion until softened, about 3 to 4 minutes. Stir in the garlic, sun-dried tomatoes, and red pepper flakes.
4. Add the arborio rice and stir for 1 to 2 minutes until lightly toasted and coated in the butter mixture.
5. Add the warm chicken broth about 1/2 cup at a time, stirring often and waiting until most of the liquid is absorbed before adding more. Continue until the rice is creamy and tender, about 20 to 25 minutes.
6. Stir in the heavy cream, parmesan cheese, spinach, and cream cheese until smooth and creamy.
7. Slice or shred the chicken and fold it back into the risotto.
8. Serve hot with extra parmesan and fresh herbs on top.
Notes
Use warm broth so the risotto cooks evenly and stays creamy.
Stir regularly, but do not rush the broth additions if you want the best texture.
Add a splash of broth or milk when reheating leftovers to loosen the risotto.
