Description

Warm, creamy, and full of smoky sausage flavor, this Easy Pierogi Casserole with Sausage is the ultimate cozy weeknight dinner. A quick, satisfying bake layered with frozen pierogies, savory sausage, caramelized onions, and melted cheddar cheese. This easy recipe delivers comfort food fast—ideal for a quick dinner, easy casserole meal, or family-friendly dish.

Ingredients

1 (16 oz) package frozen potato and cheese pierogies

1 tablespoon butter

1 small yellow onion, thinly sliced

2 cloves garlic, minced

12 oz smoked sausage, sliced into coins

1/2 cup sour cream

1/2 cup cream cheese, softened

1/2 cup milk

1/2 teaspoon black pepper

1/2 teaspoon paprika

1 1/2 cups shredded cheddar cheese

2 tablespoons chopped green onions (for garnish)

Instructions

1. In a large skillet, melt the butter over medium heat. Add the sliced onion and cook until soft and translucent, about 5 minutes. Stir in garlic and cook for another 30 seconds.

2. Add sausage slices and cook until lightly browned, then remove from heat.

3. In a bowl, whisk together sour cream, cream cheese, milk, pepper, and paprika until smooth.

4. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.

5. Layer the frozen pierogies in the dish. Add the sausage and onion mixture on top.

6. Pour the creamy sauce evenly over the casserole and sprinkle with shredded cheddar cheese.

7. Cover with foil and bake for 20 minutes. Remove foil and bake another 10–15 minutes until bubbly and golden.

8. Let rest for 5 minutes before garnishing with green onions and serving.

Notes

For an extra savory flavor, caramelize the onions for longer over lower heat.

Want more veggies? Add chopped spinach or bell peppers before baking.

If you’re prepping ahead, assemble the casserole, cover, and refrigerate up to 24 hours.
