These easy popovers rise beautifully in a regular muffin tin, creating a crispy golden crust with a soft, custardy center. Perfect for breakfast, brunch, or as a savory side dish — no special equipment required.
Ingredients
3 large eggs
1 cup whole milk (warm)
1 cup all-purpose flour
1/2 teaspoon salt
2 tablespoons unsalted butter (melted)
nonstick spray or additional melted butter for greasing
Instructions
1. Preheat your oven to 450°F (230°C) and place the muffin tin inside to heat.
2. In a mixing bowl, whisk together the eggs and warm milk until frothy.
3. Gradually add flour and salt, whisking until the batter is smooth and lump-free.
4. Stir in the melted butter.
5. Carefully remove the hot muffin tin and grease each cup thoroughly.
6. Pour the batter into each cup, filling them halfway.
7. Bake at 450°F for 15 minutes, then reduce heat to 350°F and continue baking for 15–20 minutes until puffed and golden.
8. Let rest for 1 minute in the pan, then transfer to a wire rack. Serve immediately.
Notes
Always preheat the muffin tin — it helps achieve maximum puff.
Don’t open the oven door while baking or your popovers may collapse.
For flavor twists, add grated cheese or fresh herbs to the batter.
