2 cups cheddar cheese, shredded and divided
10.5 ounces cream of chicken soup
1 cup sour cream
1/2 cup milk
1/2 cup onion, finely diced
1 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon salt
1 1/2 cups crispy fried onions
1 tablespoon parsley, chopped, optional
Instructions
1. Preheat the oven to 375°F and grease a 9×13-inch baking dish.
2. In a large bowl, mix the cream of chicken soup, sour cream, milk, onion, garlic powder, black pepper, and salt until smooth.
3. Fold in the shredded rotisserie chicken, thawed hash browns, and 1 1/2 cups of the cheddar cheese.
4. Spread the mixture evenly into the prepared baking dish.
5. Top with the remaining 1/2 cup cheddar cheese and the crispy fried onions.
6. Bake uncovered for 40 to 45 minutes, until hot, bubbly, and golden on top.
7. Rest for 5 to 10 minutes, then garnish with parsley and serve.
Notes
Use thawed hash browns so the casserole bakes evenly and does not turn watery.
Add the crispy fried onions only on top so they stay golden and crunchy.
Let the casserole rest before serving so it slices more neatly and holds together better.
