An incredibly easy one-pan meal featuring roasted kielbasa, cheese tortellini, and burst cherry tomatoes—all tossed with pesto and Parmesan. It’s weeknight dinner made simple, savory, and satisfying.
Ingredients
1 (20 oz) package fresh cheese tortellini
12 oz kielbasa sausage, sliced into rounds
2 cups cherry tomatoes
2 tablespoons olive oil
1/3 cup prepared pesto
1/4 cup grated Parmesan cheese
Fresh basil leaves, for garnish
Instructions
- Preheat oven to 400°F (200°C). Line a large sheet pan with parchment paper.
- Bring a pot of salted water to boil. Cook tortellini 2 minutes less than package instructions. Drain and rinse with cold water.
- Spread tortellini, kielbasa slices, and cherry tomatoes on the sheet pan. Drizzle with olive oil and toss to coat evenly.
- Roast in the oven for 20–25 minutes, flipping ingredients halfway, until tortellini are golden and kielbasa is crisp.
- Remove from oven and spoon pesto over the hot ingredients. Toss gently.
- Sprinkle with Parmesan and garnish with fresh basil before serving.
