Ingredients
1 cup graham cracker crumbs
4 tablespoons unsalted butter, melted
8 oz cream cheese, softened
1/2 cup powdered sugar
1/2 cup heavy cream
1 teaspoon vanilla extract
1/2 cup fresh mixed berries (raspberries, blackberries, blueberries)
1/3 cup berry compote or sauce
Instructions
- Make the crust: Mix graham cracker crumbs and melted butter. Press into the bottoms of mini cheesecake molds. Chill in fridge.
- Whip the cream: Beat heavy cream until stiff peaks form. Set aside.
- Prepare the filling: Beat cream cheese with powdered sugar and vanilla until smooth. Fold in the whipped cream.
- Assemble: Spoon filling over the crusts. Smooth tops. Chill for at least 4 hours or overnight.
- Garnish: Unmold and top with berry compote and fresh berries. Serve chilled
