Ingredients
1 cup cottage cheese
2 large eggs
1/3 cup milk
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
Butter or oil for cooking
Instructions
1. In a large bowl, whisk together cottage cheese, eggs, milk, and vanilla extract until mostly smooth.
2. Add flour, baking powder, and salt. Gently stir to combine—do not overmix.
3. Preheat a nonstick skillet or griddle over medium heat and add a small amount of butter or oil.
4. Pour 1/4 cup of batter for each pancake. Cook until bubbles form and edges are set, about 2–3 minutes.
5. Flip and cook another 1–2 minutes until golden brown. Serve warm with desired toppings.
Notes
Use full-fat cottage cheese for the richest flavor and best texture.
Blending the cottage cheese is optional—chunky curds add fun texture.
