Ingredients
4 boneless skinless chicken breasts
3 large yellow onions, thinly sliced
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1 cup reduced-sodium beef broth
4 slices provolone cheese
1 cup shredded mozzarella cheese
1 teaspoon dried thyme
Salt and black pepper, to taste
Fresh parsley, chopped (for garnish)
Instructions
- Caramelize the Onions: In a large skillet, melt butter with olive oil over medium-low heat. Add sliced onions and cook for 25–30 minutes until golden and caramelized, stirring frequently. Add garlic and sauté for 1 minute more.
- Sear the Chicken: Season chicken with salt, pepper, and thyme. In another skillet, sear chicken breasts for 3–4 minutes per side until browned. Do not cook through.
- Assemble the Bake: Preheat oven to 375°F. Spread a small amount of beef broth in the base of a baking dish. Lay chicken in the dish, top each with caramelized onions. Pour remaining broth around the chicken.
- Add Cheese and Bake: Top each chicken breast with provolone and sprinkle mozzarella on top. Bake uncovered for 20–25 minutes until chicken reaches 165°F and cheese is melted and golden.
- Garnish and Serve: Sprinkle chopped parsley before serving. Pair with mashed potatoes, noodles, or crusty bread.
