Description
This easy and satisfying Frito Pie layers flavorful chili, melty cheese, and crunchy corn chips for the ultimate comfort food casserole. It’s perfect for game day, busy weeknights, or anytime you’re craving Tex-Mex goodness.
Ingredients
1 pound ground beef
1 can (15 oz) kidney beans, drained and rinsed
1 can (14.5 oz) crushed tomatoes or Rotel
1 packet taco seasoning (or 2 tablespoons homemade)
1 small onion, diced
2 cloves garlic, minced
2 cups shredded cheddar cheese
1 bag (9.25 oz) Fritos corn chips
Optional: sliced jalapeños, sour cream, green onions, cilantro for garnish
Instructions
1. In a large skillet, cook the ground beef over medium-high heat until browned. Drain excess fat.
2. Add diced onion and minced garlic. Cook 2–3 minutes until fragrant.
3. Stir in taco seasoning, kidney beans, and crushed tomatoes. Simmer 8–10 minutes.
4. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish.
5. Layer half the Fritos in the dish. Spoon chili mixture over them evenly.
6. Sprinkle cheese over chili and top with remaining Fritos.
7. Bake 15–20 minutes until bubbly and golden.
8. Let cool slightly, garnish, and serve hot.
Notes
For a vegetarian version, substitute the beef with black beans and corn.
Add jalapeños or hot sauce if you like extra spice.
Layering some Fritos on the bottom and top gives the perfect mix of crunch and soak.
