Ingredients

2 boneless skinless chicken breasts or thighs

4 cloves garlic, minced

3 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

1 teaspoon Italian seasoning

1 cup heavy cream

1 cup parmesan cheese, freshly grated

8 ounces linguine

2 tablespoons fresh parsley, chopped (optional)


Instructions

  1. 1. Dice the chicken into bite-sized pieces and mince the garlic.
  2. Grate the parmesan cheese and chop the parsley.
  3. Bring a pot of salted water to boil for the pasta.
  4. In a large skillet, heat butter and olive oil over medium-high heat.
  5. Season chicken with salt, pepper, and Italian seasoning.
  6. Sear until golden and fully cooked, about 6-7 minutes.
  7. Remove chicken and set aside.
  8. Cook linguine in boiling water until al dente.
  9. Reserve 1/2 cup of pasta water, then drain.
  10. In the same skillet, melt more butter and sauté garlic for 1 minute.
  11. Lower the heat and add the heavy cream, stirring gently for 3-4 minutes until slightly thickened.
  12. Stir in the parmesan cheese until melted.
  13. Add cooked pasta and reserved pasta water.
  14. Toss well to coat. Return chicken to skillet and combine everything.
  15. Garnish with chopped parsley and serve warm with extra parmesan on top.

Notes

Use freshly grated parmesan for the smoothest, creamiest melt.

Don’t skip the reserved pasta water—it helps the sauce cling to the linguine.

For extra flavor, add a pinch of red pepper flakes or a squeeze of lemon.
