A quick yet flavorful meal featuring juicy garlic butter shrimp served over creamy herb rice, garnished with fresh herbs and cherry tomatoes. Perfect for a weeknight dinner or a weekend lunch.
Ingredients
12 large shrimp, peeled and deveined
2 tablespoons butter
3 cloves garlic, minced
1 tablespoon olive oil
2 cups cooked white rice
1/2 cup heavy cream
2 tablespoons fresh parsley, chopped
1/2 cup cherry tomatoes, halved
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon crushed red pepper flakes (optional)
Instructions
1. Cook rice until fluffy. In a saucepan, heat heavy cream on low, stir in fresh herbs, salt, and pepper, then fold into rice.
2. Pat shrimp dry, season with salt, pepper, and red pepper flakes.
3. Heat olive oil in a skillet over medium-high. Sear shrimp 1–2 minutes per side until pink and slightly charred.
4. Lower heat to medium, add butter, melt, and stir in garlic. Cook 30 seconds.
5. Toss shrimp in garlic butter until coated. Serve over creamy herb rice with cherry tomatoes and extra herbs.
Notes
For best flavor, use large or jumbo shrimp with tails on.
Avoid overcooking shrimp to keep them tender and juicy.
Add a squeeze of lemon just before serving for a fresh pop.
