Description

Garlic Butter Shrimp Scampi Lasagna combines the elegance of shrimp scampi with the indulgence of creamy lasagna. Ingredients

1 pound shrimp, peeled, deveined, tail-off (large or extra-large)

6 cloves garlic, minced

6 tablespoons unsalted butter

2 tablespoons olive oil

1 tablespoon lemon zest

2 tablespoons lemon juice

1 ½ cups heavy cream

1 cup grated parmesan cheese

2 cups shredded mozzarella cheese

3 tablespoons chopped fresh parsley

9 lasagna noodles (or oven-ready equivalent)

1 teaspoon salt

½ teaspoon black pepper


Instructions

1. In a large skillet over medium heat, melt 3 tablespoons of butter with 1 tablespoon olive oil. Add minced garlic and cook until fragrant.

2. Add shrimp, season with salt and pepper, and sauté until pink (about 2 minutes per side). Remove shrimp and set aside.

3. In the same skillet, melt remaining butter and olive oil. Stir in lemon zest, lemon juice, and heavy cream. Simmer until slightly thickened.

4. Add grated parmesan cheese and chopped parsley to the sauce. Stir until melted and creamy.

5. Cook lasagna noodles until al dente or prepare oven-ready noodles as directed.

6. In a greased 9×13 inch baking dish, spread a small amount of sauce, layer noodles, then shrimp, sauce, and mozzarella. Repeat layers, ending with sauce and a final cheese topping.

7. Cover with foil and bake at 375°F (190°C) for 25 minutes. Uncover and bake another 10–15 minutes until bubbly and golden.

8. Let rest for 10 minutes before slicing and serving.

Notes

Pat your shrimp dry before cooking to prevent a watery sauce.
