Description

This Garlic Chicken Bites & Creamy Cajun Spinach Artichoke Alfredo Pasta is a rich, flavorful dinner featuring golden seared chicken, buttery shrimp, and fettuccine tossed in a creamy Cajun Alfredo sauce loaded with spinach and artichokes. It’s a comforting, restaurant-worthy meal made right at home—perfect for family dinners or impressing guests.


Ingredients

1 pound chicken thighs or breasts, boneless and skinless

1/2 pound shrimp, peeled and deveined (optional)

8 ounces fettuccine pasta

4 cloves garlic, minced

1 tablespoon Cajun seasoning

1 cup heavy cream

1/2 cup grated Parmesan cheese

4 ounces cream cheese

2 cups spinach, fresh or frozen

1 cup artichoke hearts, chopped

1 tablespoon olive oil

2 tablespoons butter

1/2 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Season the chicken and shrimp with Cajun seasoning, salt, and pepper. Chop garlic, spinach, and artichokes. Bring a pot of salted water to boil.

2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high heat. Sear the chicken for 4–5 minutes per side until golden and cooked. Set aside. Sear shrimp for 1–2 minutes per side. Set aside.

3. Cook the fettuccine until al dente. Reserve 1/2 cup of pasta water and drain.

4. In the same skillet, melt remaining butter and sauté garlic until fragrant. Stir in cream and cream cheese. Whisk until smooth.

5. Add Parmesan cheese and stir until the sauce is cohesive and creamy.

6. Fold in spinach and artichokes. Simmer for 2–3 minutes. Use pasta water to adjust thickness.

7. Add pasta to the skillet and toss to coat. Return chicken and shrimp to the pan. Simmer everything together for 2–3 minutes.

8. Serve immediately with extra Parmesan, black pepper, and chopped parsley if desired.

Notes

Let cream cheese soften before adding—it blends easier into hot cream.

If using frozen spinach, thaw and squeeze out excess water to avoid a watery sauce.

To avoid overcooked shrimp, sear them separately and add them back at the end.
