Description

This Garlic Chicken Stir-Fry with Rice is quick, colorful, and loaded with bold flavor. Juicy chicken strips are coated in a savory garlic sauce, paired with vibrant vegetables and served over fluffy jasmine or basmati rice. It’s a one-pan dinner that’s easy to prepare and even easier to love.


Ingredients

1 lb boneless, skinless chicken breasts, thinly sliced

3 cloves garlic, minced

3 tablespoons soy sauce

1 tablespoon brown sugar

1 tablespoon cornstarch

1 tablespoon olive oil (or sesame oil)

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup broccoli florets

1 carrot, julienned

2 green onions, chopped

2 cups cooked jasmine or basmati rice


Instructions

1. Slice the chicken breasts into thin strips and pat dry with paper towels. Season with salt and pepper.

2. In a small bowl, whisk together soy sauce, minced garlic, brown sugar, and cornstarch to create the sauce.

3. Heat olive or sesame oil in a large skillet or wok over medium-high heat. Add the chicken and cook for 5–6 minutes until golden and cooked through. Remove and set aside.

4. Add more oil if needed. Add bell peppers, broccoli, and carrots to the skillet. Stir-fry for 3–4 minutes until just tender and vibrant.

5. Return the chicken to the pan and pour in the garlic sauce. Toss to coat and simmer on low for 2–3 minutes until the sauce thickens.

6. Serve hot over cooked rice and garnish with chopped green onions.

Notes

For best results, slice the chicken evenly so it cooks at the same rate.

Avoid overcooking the veggies; high heat and a short stir-fry keep them crisp.

Add red pepper flakes or sriracha if you prefer a spicier kick.
