Ingredients
2 boneless skinless chicken breasts
1.5 pounds baby gold potatoes, quartered
3 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon paprika
1 teaspoon Italian seasoning
1 teaspoon salt
1/2 teaspoon black pepper
1/3 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
2 tablespoons chopped fresh parsley
Instructions
1. Preheat oven to 400°F (200°C). Line a baking dish or oven-safe skillet with a drizzle of olive oil.
2. Cut the baby potatoes into quarters and place in a large bowl.
3. In the bowl, add olive oil, minced garlic, paprika, Italian seasoning, salt, and pepper. Toss to coat.
4. Rub chicken breasts with the same seasoning mixture or a fresh batch.
5. Arrange potatoes around the edges of the pan and nestle chicken in the center.
6. Roast uncovered for 25–30 minutes, flipping potatoes halfway. Ensure chicken reaches 165°F (74°C).
7. Sprinkle parmesan and mozzarella over chicken and potatoes. Broil for 2–3 minutes until golden and bubbly.
8. Garnish with chopped parsley and serve hot.
Notes
Use a meat thermometer to avoid overcooked, dry chicken.
Add quick-cooking veggies like green beans or broccoli in the last 15 minutes for a full meal.
For crispier potatoes, spread them out in a single layer, not stacked.
