These Garlic Parmesan Chicken Meatloaves are tender, juicy, and bursting with bold flavor thanks to plenty of garlic and Parmesan. Finished with a creamy sauce and easy to portion individually, they’re perfect for weeknight dinners or meal prep.
Ingredients
1 lb ground chicken (90-93% lean)
2 cloves garlic, minced
1/2 cup grated Parmesan cheese
1/3 cup breadcrumbs
1 egg
1/4 cup grated or finely chopped onion
1 tablespoon fresh parsley (or 1 tsp dried)
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
For the Garlic Parmesan Sauce:
2 tablespoons butter
2 cloves garlic, minced
1 tablespoon flour
3/4 cup milk
1/3 cup grated Parmesan cheese
Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a muffin tin.
- In a large bowl, mix together ground chicken, garlic, onion, Parmesan, breadcrumbs, egg, parsley, salt, pepper, and Italian seasoning. Combine gently.
- Shape into small meatloaves or divide evenly into muffin tin cups.
- Bake for 22-25 minutes, or until internal temp reaches 165°F (74°C).
- While baking, prepare the sauce: Melt butter in a saucepan over medium heat. Add garlic and cook 1 minute. Stir in flour and whisk for 30 seconds.
- Slowly add milk, whisking continuously. Cook until thickened, then stir in Parmesan until melted. Season to taste.
- Serve meatloaves with a spoonful of sauce and garnish with fresh parsley.
