Ingredients
1 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
¼ teaspoon ground cloves
½ teaspoon salt
½ cup brown sugar
½ cup unsulphured molasses
1 large egg
½ cup vegetable oil
½ cup boiling water
½ cup sour cream
1 teaspoon vanilla extract
whipped cream or cream cheese frosting, optional
Instructions
1. Preheat oven to 350°F (175°C) and grease a 9×9-inch baking dish or line with parchment.
2. In a medium bowl, whisk together flour, baking soda, salt, ginger, cinnamon, and cloves.
3. In a large bowl, whisk brown sugar, molasses, egg, and oil until smooth.
4. Stir in sour cream and vanilla extract until fully blended.
5. Carefully pour in boiling water and whisk until smooth.
6. Slowly add dry ingredients to the wet mixture and stir just until combined.
7. Pour into the prepared dish and bake for 30–35 minutes, or until a toothpick comes out clean.
8. Cool completely in the pan, then top with whipped cream or cream cheese frosting if desired.
Notes
For best results, use unsulphured molasses—not blackstrap.
Don’t skip the boiling water—it activates the leavening and smooths the batter.
Cake flavor intensifies after resting overnight—store and serve the next day for deeper spice.
