Ingredients
3 cups cooked chicken, chopped or shredded
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup red onion, finely chopped
1/2 cup kalamata olives
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
2 tablespoons fresh dill, chopped
1/2 cup gluten-free mayonnaise
1/4 cup plain Greek yogurt
2 tablespoons lemon juice
1 tablespoon olive oil
1 teaspoon Dijon mustard
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Chop or shred the cooked chicken into bite-sized pieces.
2. Dice the cucumber, halve the cherry tomatoes, finely chop the red onion, and chop the parsley and dill.
3. In a medium bowl, whisk together the gluten-free mayonnaise, Greek yogurt, lemon juice, olive oil, Dijon mustard, dried oregano, garlic powder, salt, and black pepper until smooth.
4. In a large bowl, add the chicken, cucumber, tomatoes, red onion, kalamata olives, feta, parsley, and dill.
5. Pour the dressing over the salad ingredients.
6. Gently toss until everything is evenly coated.
7. Cover and chill for 20 to 30 minutes before serving.
