Description

A Mediterranean-inspired chicken dinner with a spicy twist. This Greek Chili Chicken Alfredo is made with golden-seared chicken tossed in warm spices, roasted Parmesan asparagus, buttery potatoes, and topped with a velvety smoked feta Alfredo sauce. Flavor-packed and elegant enough for guests!

Ingredients

1.5 pounds chicken breast, cut into chunks

1 tablespoon Greek chili seasoning

3 ounces smoked feta cheese, crumbled

1 cup heavy cream

1 cup grated Parmesan cheese

1 bunch asparagus, trimmed

3 medium gold potatoes, diced

3 tablespoons olive oil

2 tablespoons chopped fresh parsley

Salt and black pepper, to taste

Instructions

1. Preheat oven to 425°F (220°C).

2. Toss diced gold potatoes with 1 tablespoon olive oil, salt, and pepper. Roast for 25–30 minutes, flipping halfway.

3. Arrange asparagus on a sheet pan, drizzle with 1 tablespoon olive oil, season with salt and pepper, and sprinkle with 1/4 cup Parmesan. Roast for 15 minutes.

4. Season chicken chunks with Greek chili seasoning.

5. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Sear chicken 5–6 minutes per side until golden and cooked through. Set aside.

6. In the same skillet, reduce heat and add heavy cream. Simmer for 2–3 minutes.

7. Stir in smoked feta and remaining Parmesan until melted and thickened. Season to taste.

8. Return chicken to pan, stir to coat in sauce.

9. Plate chicken with Alfredo sauce, roasted potatoes, and Parmesan asparagus.

10. Garnish with chopped parsley.

Notes

For extra crispiness, broil the asparagus for 1–2 minutes at the end.

Use regular feta with a dash of smoked paprika if smoked feta isn’t available.

Add a splash of cream or milk when reheating leftovers to keep the sauce smooth.
