Description

This Grilled Chicken Greek Salad with Tzatziki is a vibrant and satisfying bowl packed with Mediterranean flavor. Marinated grilled chicken, fresh vegetables, pasta spirals, and creamy tzatziki come together for a refreshing yet hearty meal. Ideal for lunch prep or easy dinners.


Ingredients

2 boneless skinless chicken breasts (or thighs)

2 tablespoons olive oil

2 tablespoons lemon juice

2 cloves garlic minced

1 teaspoon dried oregano

1 cup rotini pasta cooked

1 cup cucumber sliced

1 cup cherry tomatoes halved

1⁄2 cup kalamata or green olives

1⁄2 cup tzatziki sauce

2 tablespoons chopped parsley or dill

1⁄4 cup crumbled feta (optional)

salt and pepper to taste


Instructions

1. In a bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Add chicken and marinate for at least 30 minutes.

2. Grill chicken over medium heat for 6–7 minutes per side or until fully cooked. Let rest, then slice thinly.

3. Cook pasta until al dente, then rinse under cold water and set aside.

4. Slice cucumbers, halve cherry tomatoes, and prepare olives and herbs.

5. In a large bowl, layer pasta, vegetables, and grilled chicken. Drizzle with tzatziki sauce.

6. Top with crumbled feta and fresh herbs. Serve warm or chilled.

Notes

Marinate the chicken overnight for the deepest flavor.

Serve warm for dinner or chill for meal prep—both versions taste great.
