Ingredients
1 lb boneless skinless chicken breast, cut into chunks
2 tbsp olive oil
2 cloves garlic, minced
Juice of 1 lemon (plus wedges for serving)
1 tsp smoked paprika
½ tsp black pepper
½ tsp salt
1 large cucumber, diced
1 ripe avocado, diced
2 tbsp fresh cilantro, chopped (plus extra for garnish)
2 cups cooked white rice
Instructions
- In a bowl, mix olive oil, garlic, lemon juice, smoked paprika, salt, and pepper. Add chicken chunks and toss to coat. Marinate for at least 30 minutes.
- While the chicken marinates, combine diced cucumber, avocado, chopped cilantro, a bit of lemon juice, salt, and pepper in a bowl. Mix gently and chill.
- Thread marinated chicken onto skewers. Grill over medium-high heat for 10-12 minutes, turning occasionally until fully cooked.
- Divide rice into bowls, top with chicken skewers and cucumber avocado salad. Garnish with extra cilantro and lemon slices.
