Description

A fresh and flavorful bowl combining juicy grilled chicken skewers, a zesty cucumber avocado salad, and warm white rice. This wholesome meal is perfect for light dinners, meal prep, or casual entertaining. It’s packed with protein, freshness, and bold citrusy notes.


Ingredients

1 lb boneless skinless chicken breast, cut into chunks

2 tbsp olive oil

2 cloves garlic, minced

Juice of 1 lemon (plus wedges for serving)

1 tsp smoked paprika

½ tsp black pepper

½ tsp salt

1 large cucumber, diced

1 ripe avocado, diced

2 tbsp fresh cilantro, chopped (plus extra for garnish)

2 cups cooked white rice


Instructions

  1. In a bowl, mix olive oil, garlic, lemon juice, smoked paprika, salt, and pepper. Add chicken chunks and toss to coat. Marinate for at least 30 minutes.
  2. While the chicken marinates, combine diced cucumber, avocado, chopped cilantro, a bit of lemon juice, salt, and pepper in a bowl. Mix gently and chill.
  3. Thread marinated chicken onto skewers. Grill over medium-high heat for 10-12 minutes, turning occasionally until fully cooked.
  4. Divide rice into bowls, top with chicken skewers and cucumber avocado salad. Garnish with extra cilantro and lemon slices.
