Ingredients
2 boneless skinless chicken breasts
4 pineapple rings (fresh or canned, patted dry)
1/2 cup BBQ sauce (sweet and smoky)
4 slices Monterey Jack or mozzarella cheese
4 burger buns, toasted
1/2 small red onion, thinly sliced
1 cup fresh lettuce or spinach

Instructions
- Marinate the chicken in BBQ sauce for at least 30 minutes or up to overnight.
