Description

These Grilled Hawaiian Chicken Sandwiches combine juicy grilled chicken, caramelized pineapple, and melty cheese on a toasted bun with smoky BBQ sauce. Perfect for summer dinners, cookouts, or weeknight meals, each bite delivers sweet, savory, and smoky flavor in one hearty sandwich.


Ingredients

2 boneless skinless chicken breasts

4 pineapple rings (fresh or canned, patted dry)

1/2 cup BBQ sauce (sweet and smoky)

4 slices Monterey Jack or mozzarella cheese

4 burger buns, toasted

1/2 small red onion, thinly sliced

1 cup fresh lettuce or spinach

Optional: extra BBQ sauce for topping


Instructions

  1. Marinate the chicken in BBQ sauce for at least 30 minutes or up to overnight.
  2. Preheat the grill to medium-high and lightly oil the grates.
  3. Grill the chicken for 6–7 minutes per side or until it reaches 165°F. Top with cheese during the last minute to melt.
  4. Grill pineapple rings for 2–3 minutes per side until caramelized.
  5. Toast burger buns on the grill for 1–2 minutes until golden.
  6. Assemble sandwiches by layering grilled chicken, pineapple, red onion, greens, and extra BBQ sauce on the buns.
