Description

Ingredients

1 tablespoon olive oil

1 small onion, finely diced

2 garlic cloves, minced

1 pound ground beef (80/20 recommended)

0.5 cup frozen peas

0.5 cup diced carrots (fresh or frozen)

2 tablespoons tomato paste

1 tablespoon Worcestershire sauce

1 teaspoon paprika

0.5 teaspoon dried thyme

Salt and black pepper to taste

2 sheets puff pastry, thawed

1 egg

1 tablespoon water


Instructions

1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook for about 3 minutes until softened. Add garlic and sauté for 30 seconds until fragrant.

2. Add ground beef. Cook and crumble until browned and no longer pink. Drain excess grease.

3. Stir in carrots, peas, tomato paste, Worcestershire sauce, paprika, thyme, salt, and pepper. Cook for 5-6 minutes until veggies are tender and everything is well mixed. Let the mixture cool for 10 minutes.

4. Preheat the oven to 400°F (200°C). Roll out puff pastry sheets on a floured surface and cut each into 4 equal squares.

5. Spoon the cooled filling into the center of each pastry square. Fold over to form a triangle or rectangle. Seal edges with a fork.

6. Whisk egg and water in a bowl to make egg wash. Brush it over the tops of the hand pies.

7. Place hand pies on a parchment-lined baking sheet. Bake for 20–25 minutes or until golden brown and puffed. Let cool slightly before serving.

Notes

Cool the filling before assembling to prevent soggy pastry bottoms.

Don’t overfill the pastries—this helps them seal better and bake evenly.

Freeze before baking for future meals. Just add 5 extra minutes to the bake time straight from frozen.
