A wholesome, one-skillet meal made with lean ground turkey, sweet roasted potatoes, and warm spices. It’s a quick, easy, and nutrient-dense dinner solution that keeps you full and satisfied.
Ingredients
1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 small onion, diced
2 cloves garlic, minced
1 tsp smoked paprika
1/2 tsp ground cumin
Salt and pepper, to taste
2 tbsp olive oil (divided)
2 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 425°F (220°C). Toss diced sweet potatoes with 1 tbsp olive oil, salt, and pepper. Roast for 20-25 minutes until tender and caramelized.
- In a large skillet, heat 1 tbsp olive oil over medium heat. Sauté diced onion for 3-4 minutes until soft. Add garlic and cook for 30 seconds.
- Add ground turkey. Cook, breaking it apart, for 6-8 minutes until browned. Stir in smoked paprika, cumin, salt, and pepper.
- Add roasted sweet potatoes to the skillet. Mix well and cook 2-3 minutes more to combine flavors.
- Garnish with fresh parsley before serving, if desired.
