Ingredients
1 sheet puff pastry, thawed
4 large eggs (3 scrambled, 1 yolk kept whole)
⅑ cup shredded cheddar cheese
1 tablespoon milk or cream
1 tablespoon butter
Salt and pepper, to taste
1 egg (beaten, for egg wash)
1 teaspoon sesame seeds (optional)
Chopped parsley or chives (optional)
Instructions
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut the puff pastry into 4 equal squares and chill while prepping the filling.
- In a pan, melt butter and scramble 3 eggs with milk or cream. Season with salt and pepper.
- Place a spoonful of scrambled egg onto the center of each puff pastry square. Add cheese.
- Carefully place one raw egg yolk on top of the cheese if using.
- Fold pastry over to form a sealed pocket or place another square on top. Crimp edges with a fork.
- Brush tops with beaten egg and sprinkle with sesame seeds if desired.
- Bake for 15–18 minutes until puffed and golden brown.
- Let cool slightly. Garnish with fresh herbs and serve warm.
