This tropical-inspired chicken dish features juicy BBQ-coated chicken thighs paired with sweet pineapple chunks and crisp veggies, all sealed in a foil packet for a tender, flavorful meal that’s perfect for grilling, baking, or even campfire cooking.


Ingredients

4 boneless, skinless chicken thighs (or breasts)

1 cup BBQ sauce

1 can (15 oz) pineapple chunks, drained

1 red bell pepper, chopped

1/2 red onion, sliced

1 tablespoon olive oil

Salt and black pepper to taste

Fresh parsley or cilantro (optional)

Aluminum foil


Instructions

  1. Preheat grill to medium-high or oven to 400°F (200°C).
  2. Lay out four sheets of foil and place a chicken thigh in the center of each.
  3. Drizzle olive oil on the chicken and season with salt and pepper.
  4. Add pineapple chunks, bell pepper, and red onion.
  5. Pour BBQ sauce over the chicken and toppings.
  6. Fold foil to seal into packets.
  7. Cook for 20–25 minutes until chicken reaches 165°F (74°C).
  8. Open packets carefully, garnish with herbs, and serve.
