Description

This Healthy Chicken & Sweet Potato Rice Bowl is a vibrant and wholesome meal that’s full of flavor and texture. Featuring juicy spiced chicken, caramelized roasted sweet potatoes, and fiber-rich brown rice, it’s topped with a creamy sauce and fresh herbs for a weeknight dinner you’ll actually look forward to.


Ingredients

2 medium chicken breasts

2 medium sweet potatoes, diced

1 cup uncooked brown rice

2 tablespoons olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon salt

½ teaspoon black pepper

2 tablespoons chopped fresh parsley

¼ cup creamy dressing or tahini sauce


Instructions

1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

2. In a bowl, toss the diced sweet potatoes with 1 tablespoon olive oil, smoked paprika, garlic powder, salt, and pepper.

3. Spread sweet potatoes on the baking sheet and roast for 25–30 minutes, flipping halfway through, until edges are golden.

4. While potatoes roast, season chicken breasts with remaining paprika, garlic powder, salt, and pepper.

5. Heat 1 tablespoon olive oil in a skillet over medium heat. Add chicken and cook for 5–6 minutes per side, until golden and fully cooked. Let rest, then slice or cube.

6. Cook brown rice according to package directions. Fluff with a fork and keep warm.

7. To assemble, add rice to each bowl. Top with sweet potatoes and chicken. Drizzle with creamy dressing or tahini sauce and sprinkle with chopped parsley. Serve warm or chilled.

Cut your sweet potatoes evenly to ensure uniform roasting and caramelization.
