Description

This quick and healthy ground beef cabbage stir-fry is packed with flavor and makes a perfect weeknight dinner. It’s low-carb, high-protein, and completely satisfying thanks to a savory garlic soy sauce that ties it all together. Serve it on its own, over rice, or in lettuce wraps.

Ingredients

1 lb lean ground beef (90% lean or higher)

1/2 head green cabbage, chopped

3 cloves garlic, minced

2 tablespoons low-sodium soy sauce

1 tablespoon sesame oil

1 teaspoon freshly grated ginger

1 tablespoon rice vinegar

2 green onions, sliced (for garnish)

Red pepper flakes (optional, to taste)

Instructions

  1. In a large skillet over medium heat, cook the ground beef until browned and fully cooked.
  2. Add minced garlic and ginger to the skillet and sauté for 1 minute until fragrant.
  3. Stir in the chopped cabbage and cook for 5–7 minutes, until slightly tender.
  4. Mix together soy sauce, rice vinegar, and sesame oil in a small bowl. Pour over the beef and cabbage.
  5. Stir everything to coat evenly and cook for another 2–3 minutes.
  6. Remove from heat and garnish with green onions and red pepper flakes if desired.
