Ingredients
Salmon fillets
Cherry tomatoes
Mixed olives (green and Kalamata)
Fresh basil or parsley
Garlic cloves
Extra virgin olive oil
Lemon wedges
Salt and cracked black pepper
Instructions
- Preheat oven to 400°F (200°C). Pat salmon dry and season with salt and pepper.
- Heat 1 tbsp olive oil in an oven-safe skillet. Sear salmon skin-side down for 3 minutes.
- Add cherry tomatoes, olives, and crushed garlic to skillet. Drizzle 1 tbsp olive oil on top.
- Transfer skillet to oven. Roast for 8–10 minutes until salmon flakes easily.
- Remove and rest. Squeeze lemon juice and sprinkle fresh herbs before serving.
