Herbed Chicken Alfredo with Truffle Feta Cream & Crispy Parmesan Leeks

Description

This Herbed Chicken Alfredo is anything but ordinary. Creamy truffle-infused feta sauce blankets tender golden chicken, while crispy parmesan leeks add the perfect savory crunch. It’s indulgent yet simple, impressive yet easy enough for a cozy night in.


Ingredients

1.5 pounds chicken thighs or breasts, cut into bite-sized chunks

1 tablespoon truffle oil

1 cup crumbled feta cheese

1 1/2 cups heavy cream

3 garlic cloves, minced

1/2 cup grated parmesan cheese (for sauce)

1 large leek, thinly sliced

1/3 cup shredded parmesan cheese (for crispy topping)

1 tablespoon fresh thyme leaves

1 tablespoon chopped parsley or dill

2 tablespoons butter

1 tablespoon olive oil

1 teaspoon salt

1/2 teaspoon black pepper


Instructions

1. Preheat oven to 400°F. Toss sliced leeks with olive oil, salt, and 1/3 cup shredded parmesan. Spread on a baking sheet and roast for 15–18 minutes until golden and crisp. Set aside.

2. Season chicken pieces with salt, pepper, and thyme. Heat butter and a drizzle of olive oil in a skillet. Sear chicken over medium-high heat until golden and cooked through. Remove and set aside.

3. In the same skillet, reduce heat and melt more butter. Add garlic and sauté until fragrant, about 1-2 minutes.

4. Pour in heavy cream, stir, and let it simmer. Add crumbled feta and grated parmesan. Whisk until the sauce is creamy and smooth.

5. Stir in truffle oil and return cooked chicken to the pan. Let everything simmer together for a few minutes to blend flavors.

6. Mix in fresh herbs and adjust seasoning as needed.

7. Plate the chicken and sauce, and top with crispy parmesan leeks. Garnish with more herbs or lemon zest if desired.

Notes

To get the crispiest leeks, make sure they’re well dried before roasting.

Add truffle oil after cooking the sauce to preserve its flavor.

If reheating leftovers, add a splash of cream to loosen the sauce and re-crisp the leeks separately.
