Ingredients

1 lb ground beef or lamb

2 garlic cloves, minced

2 tbsp fresh parsley, chopped

1 tbsp fresh mint, chopped

1 tsp dried oregano (or 1 tbsp fresh)

1 egg

1/3 cup breadcrumbs

Salt and pepper to taste

2 tbsp olive oil (plus more for drizzling)

1 cup orzo pasta

Zest and juice of 1 lemon

1/4 cup feta cheese, crumbled

Extra mint and parsley for garnish


Instructions

  1. Make the meatball mixture: In a bowl, combine ground meat, garlic, herbs, egg, breadcrumbs, salt, and pepper. Mix until just combined.
