Description

Ingredients

4 egg yolks

3/4 cup granulated sugar

2 cups whole milk

3 tablespoons cornstarch

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cinnamon

1 teaspoon vanilla extract

2 tablespoons butter


Instructions

1. In a medium saucepan (off heat), whisk together egg yolks and sugar until pale and smooth.

2. Gradually whisk in the milk. Sift in the cornstarch and mix until fully combined.

3. Cook over medium heat, whisking constantly, until the mixture thickens into a custard-like consistency.

4. Remove from heat and stir in nutmeg, cinnamon, and vanilla extract.

5. Add butter and stir until melted and glossy.

6. Let cool slightly, then transfer to clean jars. Refrigerate until fully cooled and thickened.

Notes

Be patient while cooking—slow, steady whisking prevents curdling.

Use freshly grated nutmeg if possible for a more aromatic result.
