Ingredients

2 cups sweetened shredded coconut

1/2 cup sweetened condensed milk

1 teaspoon vanilla extract

Pinch of salt

1 (14 oz) bag soft caramels

2 tablespoons heavy cream

2 1/2 cups milk chocolate chips or chopped milk chocolate

1 tablespoon coconut oil (optional)


Instructions

1. Line an 8×8-inch pan with parchment paper.

2. In a bowl, mix coconut, sweetened condensed milk, vanilla extract, and salt until well combined.

3. Press mixture evenly into the prepared pan and freeze for 20 minutes.

4. In a saucepan, melt caramels with heavy cream over low heat, stirring until smooth.

5. Pour caramel over the chilled coconut layer and spread evenly. Freeze for another 15–20 minutes.

6. Lift chilled mixture from pan and slice into bars or squares using a greased sharp knife.

7. Melt chocolate and coconut oil in microwave-safe bowl in 30-second intervals, stirring until smooth.

8. Dip each bar into melted chocolate, tap off excess, and place on parchment-lined tray.

9. Chill bars for 15 minutes or until chocolate sets. Store in fridge or cool pantry.

Notes

For cleaner slices, chill the bars well and use a knife dipped in hot water.

Use high-quality chocolate for a smoother melt and better flavor.
