Ingredients
2 Honeycrisp apples, thinly sliced
4 cups leafy greens (romaine, arugula, or spring mix)
1/2 cup feta cheese, crumbled
1/3 cup candied walnuts or pecans, chopped
1/4 cup dried cranberries
3 tablespoons olive oil
1 tablespoon apple cider vinegar
1 teaspoon honey
1/2 teaspoon Dijon mustard
Pinch of salt and black pepper
Instructions
1. Wash and dry your greens. Tear or chop them into bite-sized pieces and place in a large salad bowl.
2. Core and thinly slice the Honeycrisp apples. Toss with a little lemon juice if desired to prevent browning.
3. Toast the nuts in a dry skillet over medium heat until fragrant. Let cool.
4. In a bowl or jar, whisk together olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper to make the vinaigrette.
5. Assemble the salad: layer apples, feta, nuts, and cranberries over the greens.
6. Drizzle vinaigrette on top just before serving and gently toss.
