Ingredients
2 large chicken breasts, cut into bite-sized chunks
2 tablespoons hot honey
2 tablespoons balsamic vinegar
2 garlic cloves, minced
2 tablespoons butter (divided)
1 cup feta cheese (block-style in brine recommended)
3 tablespoons heavy cream
1 pound Brussels sprouts, halved or quartered
2 tablespoons olive oil
½ teaspoon salt
¼ teaspoon black pepper
Optional: pinch of chili flakes, fresh herbs for garnish
Instructions
1. Preheat oven to 400°F (200°C). Toss halved Brussels sprouts with olive oil, salt, and pepper. Roast for 20–25 minutes until crispy and golden, flipping halfway.
2. Season chicken bites with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken until golden brown and cooked through. Remove and set aside.
3. In the same skillet, reduce heat to medium-low. Add 1 tablespoon butter and minced garlic. Sauté until fragrant.
4. Stir in hot honey and balsamic vinegar. Simmer until slightly thickened. Return chicken to skillet and toss to coat. Let glaze caramelize for 2–3 minutes.
5. In a food processor, blend feta cheese with 1 tablespoon butter and heavy cream until smooth and creamy. Add more cream if needed to reach desired consistency.
6. To serve, spread whipped feta onto plates. Top with glazed chicken and scatter crispy Brussels chips. Garnish with herbs if desired.
