Description
These classic Southern hush puppies are crisp and golden on the outside, tender and moist on the inside, with just the right balance of sweet and savory. Perfect as a side dish for fried fish or BBQ, or served with a bold dipping sauce, they come together quickly and fry up beautifully.
Ingredients
1 cup yellow cornmeal
½ cup all-purpose flour
1 ½ teaspoons baking powder
1 tablespoon sugar
½ teaspoon salt
¾ cup buttermilk
1 large egg
¼ cup finely minced onion
Oil for frying (peanut or vegetable)
Instructions
1. In a large bowl, combine the cornmeal, flour, baking powder, sugar, and salt.
2. In a separate bowl, whisk together the buttermilk and egg until well blended.
3. Stir the wet ingredients into the dry ingredients just until combined.
4. Fold in the minced onion and let the batter rest for 5 minutes.
5. Heat 2 inches of oil in a deep skillet or Dutch oven to 350°F (175°C).
6. Using a small scoop or spoon, drop the batter carefully into the hot oil.
7. Fry for 2-3 minutes per side, or until golden brown and crisp.
8. Remove with a slotted spoon and drain on paper towels.
9. Serve warm with dipping sauce or alongside your favorite meal.
Notes
Don’t overmix the batter — a few lumps are okay and help keep the hush puppies fluffy.
Test one hush puppy first to make sure the oil is the right temperature before frying a full batch.
For extra flavor, try adding chopped green onions, jalapeños, or a pinch of cayenne pepper.
