Description

Ingredients

1 cup unsalted butter, softened

4 cloves garlic, minced

2 tablespoons fresh parsley, finely chopped

1 tablespoon fresh thyme or rosemary, finely chopped

2 teaspoons Dijon mustard

1 tablespoon lemon juice

1 teaspoon lemon zest

½ teaspoon crushed red pepper flakes or cayenne pepper (adjust to taste)

½ teaspoon salt

¼ teaspoon black pepper

1 tablespoon chives or shallots, finely chopped


Instructions

1. Let the butter sit at room temperature until softened, but not melted.

2. Mince the garlic and chop all fresh herbs. Zest and juice the lemon.

3. In a bowl, mix the softened butter with garlic, herbs, Dijon, lemon juice, lemon zest, red pepper flakes or cayenne, salt, and pepper.

4. Taste and adjust seasoning: add more citrus for brightness or heat if desired.

5. Transfer the butter mixture to parchment or plastic wrap, roll into a log, and seal the ends.

6. Chill for at least 1 hour until firm.

7. Slice into rounds and serve over steak, grilled veggies, potatoes, or bread.
