Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- Cream together butter and sugar until fluffy. Beat in eggs one at a time, then vanilla and lime zest.
- In a separate bowl, whisk flour, baking powder, and salt. Alternate adding dry mix and milk into butter mixture. Set aside.
- For the cheesecake filling, beat softened cream cheese with sugar, lime juice, and an egg until smooth.
- Fill each cupcake liner halfway with batter. Add a spoonful of cheesecake filling on top and gently swirl with a skewer.
- Bake for 18–20 minutes until set. Cool completely.
- Top each cupcake with blueberry jam and fresh blueberries. Sprinkle with lime sugar if using.
