Ingredients
2 ½ cups white chocolate chips
1 can (14 oz) sweetened condensed milk
1 tablespoon butter
1 teaspoon vanilla extract
¾ cup maraschino cherries, chopped and patted dry
½ cup semi-sweet chocolate chips, divided
Instructions
1. Line an 8×8-inch pan with parchment paper and lightly grease it. Leave some overhang for easy lifting.
2. In a saucepan over medium-low heat, stir together the white chocolate chips, sweetened condensed milk, and butter until fully melted and smooth.
3. Remove from heat and stir in vanilla extract.
4. Fold in the chopped, dried maraschino cherries and ⅓ cup of the chocolate chips (save the rest for topping).
5. Pour the mixture into the prepared pan, spreading it evenly.
6. Sprinkle the remaining chocolate chips over the top and press them in gently.
7. Refrigerate for at least 3 hours or until completely set.
8. Once firm, lift out the fudge and slice into squares.
Notes
Dry the cherries thoroughly to prevent the fudge from becoming too soft.
Use parchment paper with overhang to make removing the fudge easier.
High-quality white chocolate will give the smoothest texture and best flavor.
