Ingredients
2 large chicken breasts
2 tablespoons Cajun seasoning
1 cup heavy cream
1 cup freshly grated Parmesan cheese
8 ounces fettuccine pasta
Instructions
1. Generously season both sides of the chicken breasts with Cajun seasoning.
2. Heat a skillet over medium heat with a drizzle of oil. Sear chicken for 4–5 minutes per side until fully cooked. Remove and let rest.
3. In a large pot, cook fettuccine in salted boiling water until al dente. Reserve 1/2 cup of pasta water, then drain.
4. In the same skillet, reduce heat to low and pour in the heavy cream. Simmer and scrape up browned bits from the pan.
5. Stir in Parmesan cheese until melted and smooth.
6. Add the cooked fettuccine and toss to coat. Use reserved pasta water to loosen the sauce if needed.
7. Slice the rested chicken into strips and serve over the creamy pasta. Garnish with extra Cajun seasoning or parsley if desired.
Notes
Use freshly grated Parmesan for the creamiest, smoothest sauce. Pre-shredded cheese may not melt properly.
To keep the sauce from breaking, avoid boiling the cream—just a gentle simmer is best.
You can substitute Cajun seasoning with a homemade mix of paprika, cayenne, garlic powder, and thyme.
